It ain’t a new dish, actually.

Tulapho or pork cooked “Filipino people” style is simply cuts of the animal’s belly cooked in its own fat. Like us – cooked in our fat since decades ago. But then this is not a political discourse. This is a recipe.

What we need are:

Half a kilo of pork belly
A cooking pan
Water and salt

Cut away the bone from the meat and cut into half-inch slices.  Add salt to your liking and boil the cuts in water until the fat oozes out.  Fry to golden-brown perfection.  You can add garlic if you like to assuage the guilt and make you feel healthy.  Feel, that is.
