SQUID ADOBO | Photo by Yasmin Pascual-Dormido

Yasmin is back on the latok.  She shares with us once again a recipe.  Adobo nga lukos is on the menu, folks!  Here it is:

½ kilo medium-sized squid, washed and cleaned
5 tablespoons black vinegar
1 clove garlic, pounded
Pepper to taste
Granulized seasoning
2 tbsp canola oil
Bay leaves
1 red bell pepper, sliced
1 large onion cut into rings

In a bowl throw in the squid, black vinegar and pounded garlic.

Thoroughly mix the squid into the marinade to allow it to absorb the vinegar and the garlic,

Transfer it into a pan and cook in a low-heat stove for 5 to 10 minutes.

Once pinkish in color, take out the remaining liquid and set aside.

Pour canola oil on the pan.

Stir fry squid in garlic and the sliced red bell pepper.

Add the onion rings and continue stir frying.

Add bay leaves, pepper and seasoning.

Stir fry for another 2 minutes before lifting pan from stove

Serves 4 to 5 people.

We don’t say bon appetit.  We say, manamit nga pag-kaon!
